Dong Ding

Also known as Tung Ting Oolong or Frozen Summit Oolong, Dong Ding Oolong is one of Taiwan’s most famous teas. Its small, pellet-like rolled leaves produce an aromatic, lemon yellow brew with scents of gardenias, mulched grass and buttery vanilla pastries. The flavor of Dong Ding is true to the aroma, with the added complexity of toasted nuts, fresh cream and a slight astringency. A velvety mouthfeel transforms into a slightly drying finish with lasting flavors of honeydew, flowers and nuts. The second infusion is truly remarkable. It’s even smoother, creamier and more floral than the first. Later infusions reveal an enticing mineral edge and more honeyed flavors. Pair Dong Ding Oolong with simple, creamy foods, such as panna cotta or uniced vanilla cake dipped in warm cream.

Tea to Water Ratio 1:1. If you prefer a stronger flavor, use up to two grams of tea for each cup of water.

Water: Filtered water is best. 180ºF (simmering with tiny bubbles)

Traditional Steeping: 3 to 4 minutes

Flash Steeping: First, we run warm water over the tealeaves and pour it off very quickly. This removes any impurities and “awakens” the tealeaves for brewing. Then, we steep the tea – 15 to 35 seconds.

Spring gardens

This tea brews up to a pale yellowish liquor that reminds of a creamy butter in coloring. And the wet aroma is vastly reassuring to me as the grassy spinach scent has totally faded out and is replaced by one of orchids and lilacs. I am also able to pick up a vanilla aroma as well as one of burnt sugar. Definitely a drastic change from the dry nose. The taste is one of flowers with a mineral undertone. This brew has a medium mouthfeel with a lingering aftertaste of burnt sugar. This dong ding makes for a rather enjoyable cup. What I find different about this offering from all of the other Dong Dings that I have tried is that the mineral taste shows up in the very first cup. This is generally a flavor that makes its appearance in the third or fourth steeping. This oolong makes for a delightful every day drink being both flavorful and reasonably priced.
