Assam #1

Assam, India is renowned for producing full-flavored, malty black teas. Our Assam Black Tea No. 1 is no exception. Its small, charcoal black leaves hold bold aromas that hint at the flavors unlocked during steeping. The clear, copper-red brew is equally aromatic, emitting fragrances of malt, flowers and spice. Likewise, the flavor includes notes of flowers, tilled earth, minerals, warming spices, baked apples and, of course, malt. A balanced, refreshing aftertaste and a smooth, mellow second infusion keep the flavors of Assam No. 1 coming long after the first sip is gone. Try it with or without milk and sugar, or pair it with your favorite breakfast foods (like mushroom or ham quiche), afternoon tea sweets of all kinds or grilled lamb over couscous.

Tea to Water Ratio 1:1. If you prefer a stronger flavor, use up to two grams of tea for each cup of water.

Water: Filtered water is best. Use water at 212ºF (fully boiling)

Traditional Steeping: 3 to 5 minutes

Flash Steeping: First, we run warm water over the tealeaves and pour it off very quickly. This removes any impurities and “awakens” the tealeaves for brewing. Then, we steep the tea – 35 to 60 seconds.

Hot or Iced, I like it

There are so many Assams out there, it's hard to find one i actually can enjoy consistently until I found this one. Whether it's hot or iced (it's summer right now), I can dig this tea. It's malty, somewhat sweet and I can definitely taste the flowery notes. Definitely try it iced for those hot summer days or of course hot in the mornings when you need a pick me up.
