Ali Shan

Our Ali Shan Oolong hails from the famed Ali Shan (a.k.a. “Alishan” or “Ali Mountain”) of Taiwan. It is a high elevation Taiwanese oolong with all the floral, sweet flavors you’d expect of one. Dry and wet, the large leaves emit aromas of clover honey, field grasses and fresh flowers. Ali Shan’s complex flavor profile includes classic floral, honeyed and creamy notes, as well as hints of marine air, clover fields, sage and cracked black pepper. A honeyed finish with suggestions of pepper, menthol and sweet grass and a creamy, sweet second infusion make Ali Shan a tea that can be enjoyed for a long period of time. Try brewing it gong fu style with a leisurely breakfast of sliced green pears, chopped fresh mint and Greek yogurt, or with a dinner of creamy sage-asparagus risotto.

Tea to Water Ratio 1:1. If you prefer a stronger flavor, use up to two grams of tea for each cup of water.

Water: Filtered water is best. 180ºF (simmering with tiny bubbles)

Traditional Steeping: 3 to 4 minutes

Flash Steeping: First, we run warm water over the tealeaves and pour it off very quickly. This removes any impurities and “awakens” the tealeaves for brewing. Then, we steep the tea – 15 to 35 seconds.

A cool late summer morning with a view of grassy feilds while sitting on a swing.

I fell in love with this tea after the first sip. It has a fruity nutty aroma with an after taste of honey. Added a bit of honey to enhance the aroma. Its an amazing afternoon tea.

An instant favorite

The smell is hard to describe, but has a subtle hint of nuts. The tea itself is sort of a nutty, honey, green flavor, with something I can only describe as "graham crackers." The flavor is very unique and definitely satisfying. The tea is flavorful, but not overly bold, smooth but not thick. If you try one tea today, make it this one!
